Protein, omega-3 fats, antioxidants and fiber first thing in the morning. And, in the form of pancakes no less!
Servings – about 6 medium pancakes
Note: almond flour pancakes are heartier and denser than flour based pancakes (ie they’re not light and fluffy). You can also experiment with hazelnut flour and other nut flours in the store if you have a preference or need to avoid almonds. Feel free to add soaked chia to your existing pancake recipes.
1 cup blanched almond flour
1/8 cup soaked ground chia seeds + 2 Tbs water or almond milk
1 Tbs maple syrup
1/4 tsp salt
Mix all ingredients together with a whisk.
Heat butter or coconut oil in a skillet on medium heat (lower the heat slightly once you get going so you get an cook evenly with no threat of burning the edges).
Top with fruit and maple syrup and enjoy 🙂
